45ml Grey Goose Vodka
5ml Coconut Water and Demerara Sugar syrup
5ml Coffee Flower Honey
3 dashes Saline solution
42ml Espresso Mix

How to Make an Espresso Martini

Add all ingredients into a Boston Glass or shaker.

Shake all ingredients very hard and fine strain into a coup or coupette glass.

What Is An Espresso Martini?

The Espresso Martini was created by the bartending legend Dick Bradsell in 1983, at iconic venue the Soho Brasserie.


Legend has it a supermodel had asked Dick to create a cocktail with Espresso in it and this legendary cocktail was created.


This version of the Espresso Martini recipe comes from Jigger and Pony in Singapore.


“We developed our signature Espresso Martini to highlight the high-quality coffee in our fun take on this modern classic,” says principal bartender, Giovanni Graziadei.


Jigger and Pony collaborated with Singapore’s local coffee roaster pioneer, PPP Coffee (previously known as Papa Palheta), to create the perfect blend.


“Featuring a combination of Rio Brilhante (Brazil) and Thippanahalli (India) coffee, it delivers a firm foam while retaining the nuances of the high-quality beans,” Graziadei expands.


To facilitate the creation of the foam the Jigger and Pony team add dark sugar syrup, coconut water, and honey from coffee flowers. This creates a bold, rich aroma with a slight wisp of nuttiness.


The traditional Espresso Martini cocktail is garnished with three coffee beans. However, Graziadei describes how the Jigger and Pony team wanted something a little more playful.

Q & A with principal bartender, Giovanni Graziadei

Tell us a little about your bar?

Jigger & Pony opened in 2012, so we’re celebrating our 10th anniversary this year! It has grown to become one of the leading cocktail bars in Singapore and the region.


Most notably, we were #1 in Asia’s 50 Bars List in 2020 and #2 in 2021.


Everything we do at Jigger & Pony revolves around the idea of convivial hospitality.


A place where people can find comfort, forge friendships and share happiness.


What goes into a good cocktail?

Every good cocktail starts with a strong idea, storyline and of course, team effort!


The starting point, for us, is always: what does this cocktail stand for and what do we want to express with this drink?


After the idea is translated into a cocktail, we make constant adjustments by taking in feedback from different bartenders in the team.


What is your favourite thing about working in the bar industry?

Working in this dynamic environment, you really do get the chance to meet and learn from different people, both colleagues and guests, from all over the world and from diverse backgrounds.


Getting to know people from all walks of life is what keeps this job exciting and filled with exciting learning


How did your bar have to adapt to COVID-19?

COVID-19 has definitely challenged the industry as a whole, but in many ways, it served as a great learning opportunity for all of us at Jigger & Pony.


It was a quick sprint to adapt to takeout and
delivery options, as well as diversifying our marketing channels.


During the height of the pandemic, we also invested in creating PONY Cocktails – Jigger & Pony Group’s premium bottled cocktail brand handcrafted by our own bartenders – and e-commerce channels for consumers to purchase online.


Now, we often look at developing content that connects customers to our brand, even without them having to be physically at our venues.


Apart from your bar, where you do like to drink and socialise?

I love the Singapore bar scene because it offers an incredibly wide variety of options and concepts.


Some of my favourites include RPM, as I get the chance to discover the world of Japanese shochu that I was previously not aware of.

For a special occasion, I like to head to Atlas. The stunning decor and their Martini never fails to impress.


What advice would you give to anyone looking to replicate your success in the bar industry?

Focus on progressing and improving 1% everyday.


Quality and success takes a long constant effort – after all, becoming a craft bartender is a marathon, not a sprint!
