50 ml Gin or Vodka

12.5 ml Mancino Secco Vermouth

12.5 ml Mancino Bianco Vermouth

3 Dashes Peach Bitters

Garnish

Wakamomo Peach

Method

Add all ingredients to a mixing glass and stir with ice.

Find strain into a chilled martini glass.

The History Of The Drink

The Martini VS Vesper was created at DarkSide, a luxurious cocktail bar located within the famous Rosewood Hotel in Hong Kong.

 

“At DarkSide bar Rosewood Hong Kong our Martini VS Vesper has been a big hit!” says beverage manager Simone Rossi.

“It is really appreciated and became very popular in very short time! We saw opportunities and changes of the way people are drinking in Hong-Kong.

 

Most of our guests are often more and more attracted to discover classic cocktails. At DarkSide we have a strong focus and we defined our DNA around classics.”

 

DarkSide is a cocktail lounge that offers rare aged spirits, vintage cigars and classic cocktails complemented by sultry live jazz.

 

Awarded at the World’s 50 Best Bars 2021, listed among some of the world’s finest bar institutions, DarkSide has entered at the 49th ranking, continuing the bar’s continuous success from ranking 40th on the Asia’s 50 Best Bars 2021.

 

Darkside was also named as Best Hotel Bar and Best Bar of the Year by Timeout Hong Kong 2021.

 

“Consumers more often are attracted towards Martini style of drinks,” notes Rossi.

 

“With Martini VS Vesper what we did was to make a more approachable martini where the vermouth blend of Secco and Bianco are more persistent, with help of peach bitter that add floral notes.”

 

These elements combine to create a perfect martini – smooth and easy to drink, garnished with a Japanese baby peach called Wakamomo.

 

Rossi is meticulous when it comes to the creation of the perfect martini.

 

“A must rule in our Martini VS Vesper of course is ice, temperature, and dilution. The glass we use is just perfect size that allowed our guests to finish the martini within few sips.”

Simone Rossi – Beverage Manager DarkSide at Rosewood Hong Kong

Simone Rossi is the talented beverage manager behind DarkSide, a premium rare aged spirits destination in Rosewood Hong Kong.

 

A native of Grosseto, Italy, Rossi grew up in a big, boisterous family, and his warm personality and love of gathering around food compelling him to pursue hospitality.

 

In his studies, he found his calling with bartending because it allowed him to create a welcoming environment for guests and exercise his creative abilities.
